We really love snickerdoodles in our house mainly because they are delicious, but also because the girls can easily participate in rolling the cookie dough balls in the cinnamon and sugar mixture. That’s why I pretty much flipped when I saw a recipe for PUMPKIN snickerdoodles. Yes, they are as amazing as they sound and yes, you’re going to want to make them ASAP. Add a scoop of ice cream and some spooky sprinkles for the most delicious Halloween Ice Cream Sandwiches ever.

These Pumpkin Snickerdoodle Halloween Ice Cream Sandwiches are perfect for a Halloween themed family night or really any time in between. Change up the sprinkles for a festive Fall or Thanksgiving dessert.
Ingredients
- 1 batch of Pumpkin Snickerdoodle Cookies (See below for the recipe we used)
- Vanilla Ice Cream
- Halloween Sprinkles
Instructions

Make a Batch of Pumpkin Snickerdoodle Cookies—Click HERE for the recipe we used.

Once your cookies have cooled add a scoop of ice cream to half of the cookies.

Place a cookie on top to make an ice cream sandwich.

Roll the sides of the ice cream sandwich in your favorite Halloween sprinkles.

These Pumpkin Snickerdoodles are seriously delicious on their own. But I must say, when paired with a scoop of ice cream and some festive sprinkles it’s a match made in Fall treats heaven. My husband (who is a die hard snickerdoodle purist) gobbled them right up and gladly helped himself to seconds. You’re going to love these! They’re the perfect sweet treat that doubles as an activity for a family night and I love how you can easily change up the sprinkles to make them for Halloween, Thanksgiving, or really any day in between.
