With spring and summer on the horizon and the itch to travel in full force, I’ve been dreaming of Dole Whip, which is hands down our absolute favorite Disney treat. Any other Dole Whip fanatics out there?! I’m a sucker for a good copycat recipe and this 3 Ingredient Lucky Pot O’ Gold Pineapple Whip comes pretty darn close to the original.
I’ve been inspired by following along with Ashley from Veggies and Virtue to serve my girls healthier snack and mealtime options. While this recipe isn’t exactly healthy, it’s definitely a better option than most of the sugary snacks I tend to serve around holidays. Yup, totally guilty there.
I love that the ingredients are SIMPLE and can be whipped up in no time flat. This pineapple whip is incredibly tasty, easy and a perfect St. Patrick’s Day (or any day really) treat. Let’s whip some up!
- 1 Bag of Frozen Pineapple
- 1 1/4 Cup Coconut Milk
- Honey to taste
- Pour the bag of frozen pineapple in your food processor. Alternate blending and adding coconut milk 1/2 cup at a time until the pineapple is well blended and resembles ice cream.
- Add honey to taste (You really don't need much at all) and blend mixture once more.
- Print out the rainbow toppers and cup wraps (FREE download at the end of this post). Attach the rainbow to a straw or lollipop stick with tape. Wrap the cup wraps around your serving cup and secure with tape.
- Enjoy your tasty treat!
You can serve your pineapple whip completely by itself or add the FREE printable cup wrapper and rainbow topper to make it even more festive for your St. Patrick’s day celebration. I love adding little inexpensive touches to make our normal days at home a little bit more magical.
